06 Oct Chaga Power Mushroom & Gnocchi
- 2 tsp Chaga Power + 250ml boiled water
- 200g Roughly chopped Organic Chestnut Mushrooms
- 1 Thinly sliced Onion
- 1 Large crushed clove of Garlic
- 1 tbsp coconut fat
- ¼ green Finger Chilly
- 3 tbsp Yoghurt
- Handful of finely chopped Kale
- Salt & Pepper to taste
Heat up the coconut fat on a high heat in a large frying pan. Add your garlic and let fry for just a minute or two. Continuously stir as otherwise your garlic will burn. Add your onions and fry until lightly brown but still a bit crisp. You can now throw in your mushrooms and fry for no longer than 3 minutes. We want all ingredients cooked but still have a bit of bite to them, as we will now add in the 250ml of hot Chaga Power instead of using a stock. Now you can also add in your kale. In terms of adding the yogurt, please do so now but quite slowly as otherwise it may split. If it does split then adding a little bit of plan flour into the mix can help un-split it!
In terms of the Gnocchi I used @bionitafreefrom and cooked accordingly to their instructions.
Add Gnocchi in a bowl, pour mushroom sauce on top and serve!
If you are a lover of cheese this would marry really well with this recipe too with a bit sprinkled on top!
